Instructions:

In a third shallow dish, place the breadcrumbs.
Coat each chicken breast in the flour mixture, then in the beaten eggs, and finally in the breadcrumbs, making sure to press the breadcrumbs into the chicken to adhere well.
In a large, deep pan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F.
Fry the chicken in the hot oil for about 4-5 minutes on each side or until golden brown and fully cooked through.
Toast the buns and assemble the sandwiches with the fried chicken, lettuce, and mayonnaise, if desired.
